1 teaspoon ground ginger

1 teaspoon white pepper

½ cup butter at room temperature

1 cup sugar (plus more for topping)

1 egg

2 tablespoon grated fresh ginger root

Combine the flour, soda, and spices. Mix together the butter and sugar very well. Beat in the egg. Add the molasses, vinegar, and fresh ginger. Fold in the flour mixture.
