Just in time for a Cinco de Mayo party, dessert will be as much fun as the cocktails, says Jean Millner, who provides another tempting dessert!

Margarita Cupcakes

for the cupcake:

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter at room temperature
  • 3/4 cup sugar
  • 3 eggs, separated
  • 1 tablespoon lime zest
  • 2 tablespoons tequila

Preheat the oven to 350 degrees. Mix together the flour, baking powder and salt.

In a stand mixer, mix together the butter and sugar until light and fluffy. Add the egg yolks, zest, and tequila and mix well. Stir in the flour mixture.

In a separate bowl, whisk the egg whites with a pinch of salt until stiff. Fold the whites in the batter. Spoon into a lined cupcake pan (recipe will make 18 cupcakes). Bake for 20 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool completely.
for the glaze:

  • 2 tablespoons lime juice
  • 1 cup sifted powdered sugar
  • 1 tablespoon tequila
  • green food coloring, if desired
  • coarse sugar
  • fleur de sel

Mix together the lime juice, sugar, and tequila until smooth. If desired, add a drop of green food coloring. Brush the tops of the cooled cupcakes with the glaze. Sprinkle with coarse sugar and a few grains of fleur de sel — the sweet/salty contrast is delicious.
