Just in time for Thanksgiving, the perfect recipe for luscious garlicky mashed potatoes. Choose russet potatoes for their mealy texture which yields the creamiest mashed potatoes.

Garlic Mashed Potatoes

1 head of garlic
Olive oil
4 russet potatoes
1/2 cup half and half
1/2 cup butter
Salt and pepper to taste

Peel the garlic, place in a ramekin, and cover with olive oil. Bake at 350F for 30 minutes, or until the garlic is very soft. Peel the potatoes, cut in half crosswise, place in a stock pot and cover with water. Bring to a boil and simmer until tender, about 20 minutes. Put the potatoes through a ricer. Put the potatoes back on the stove and stir in the cream, butter, garlic, and seasonings.
