When you remember a recipe that you last ate over a year-and-a-half ago, it’s a really delicious dish. Lynne called and asked for a copy of the Ginger Spice Cookies from a Caribbean cooking class she took last year.

Ginger Spice Cookies
2 ¼ cups flour
¾ teaspoon baking soda
¼ teaspoon cloves
¼ teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon white pepper
½ cup butter at room temperature
1 cup sugar (plus more for topping)
1 egg
¼ cup molasses
1 teaspoon vinegar
2 tablespoon grated fresh ginger root
Combine the flour, soda, and spices. Mix together the butter and sugar very well. Beat in the egg. Add the molasses, vinegar, and fresh ginger. Fold in the flour mixture. Scoop into balls (use a #100 disher), press with the bottom of a glass dipped in sugar. Place on a lined baking sheet, and bake and 350 degrees for 10 minutes.
