Cranberry-Apricot Relish
2 pounds onions, thinly sliced
4 tablespoons butter
1/2 cup sugar
2 garlic cloves, minced
½ cup red wine vinegar
¼ cup water
2 cups cranberries
½ teaspoon salt
½ cup chopped dried apricots

In a large fry pan, melt the butter and sauté the onions until well-cooked, about 30 minutes. Add the sugar and garlic. Add the vinegar, water, cranberries, salt, and apricots and cook until the berries have burst. The relish will keep, refrigerated, for several weeks.
