To whip a meringue, the egg whites must be free of any yolk or fat. To separate eggs, crack the egg on the counter, hold the egg vertically and completely lift off half of the shell. Pass the yolk once into the other half egg shell as the white falls into a bowl. Reserve the yolks for another recipe. If the yolk breaks, be sure to wash your hands before cracking another egg!
Note: Only pass the yolk once to the other shell because the more times you pass the yolk, then the more likely that the yolk will break. A little white can be in the yolks, but no trace of yolk should be in the whites.
