Aebleskivers are a round pancake ball filled with jam and dusted with powdered sugar. They are made in a special aebleskiver pan on top of the stove. Aebleskivers pans are available in seasoned cast iron or with a nonstick finish.
Here is a recipe for this delicious treat:
Combine the flour, cornmeal, salt, and baking soda in a bowl. Whisk together the buttermilk, egg yolks, and butter and fold into the flour mixture. Whip the egg whites until stiff, then fold into the batter.
Heat the aebleskiver pan on medium heat and brush with melted butter. Put a tablespoon of batter into each hole. Put a teaspoon of jam on top of the batter and then top with a little more batter. Cook until bubbles appear on the batter. Use a small icing spatula to turn the ball over and cook the other side. When browned all around, remove and dust with powdered sugar.
Do you really need a special aebleskiver pan? Yes, because they are eaten as fast as they are made!
